A growing number of Minnesota deer processors say the new regulations addressing concerns over lead fragments in venison have prompted them to opt out of participating in the donation program this year. Among other things, the new rules prohibit donating ground venison, and only whole cuts will be accepted. “How many people are going to eat venison stew?” asked Henry Hoffman, owner of Hoffman’s Town & Country.
